# How To:
01 - Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add quartered baby potatoes and season with kosher salt, black pepper, and smoked paprika. Cook, stirring occasionally, until potatoes are golden brown and tender, approximately 12 to 15 minutes. Transfer potatoes to a plate and cover to keep warm.
02 - Pat steak cubes dry with paper towels. Season all sides with kosher salt and black pepper.
03 - Add remaining 1 tablespoon olive oil to the pan. When hot, arrange steak cubes in a single layer. Sear for 2 to 3 minutes per side until well browned and cooked to preferred doneness. Cook in batches if needed to avoid overcrowding. Remove steak and place with the potatoes.
04 - Lower the heat to low. Melt unsalted butter in the skillet, then add minced garlic. Stir constantly until garlic is fragrant, about 30 seconds.
05 - Return the steak bites and potatoes to the skillet. Toss thoroughly to coat with garlic butter. Sprinkle with chopped fresh parsley and serve immediately.
