# Expert Tips:

01 -
  • They're done in 40 minutes, most of which is just waiting for chicken to cool, so weeknight dinners suddenly feel achievable.
  • Greek yogurt keeps everything light without sacrificing that creamy, satisfying bite that makes people forget this is technically a diet food.
  • The lettuce leaves make you feel like you're eating something delicate and special, even though you're basically assembling ingredients.
02 -
  • Don't make these more than a couple hours ahead or the lettuce starts to absorb moisture and loses its structure; assemble them as close to eating as possible.
  • Your Greek yogurt makes or breaks this dish, so taste your dressing before committing it to the salad and adjust seasonings boldly.
03 -
  • Make your dressing first while you're prepping vegetables so the flavors have time to meld, and taste it multiple times as you go because you might need more lemon juice than you think.
  • Pat your lettuce leaves dry with a paper towel instead of just rinsing them; dry lettuce holds up to the moisture from the salad for longer without falling apart.
