01 - 4 slices cheddar cheese or Monterey Jack
02 - 2 tablespoons unsalted butter, softened

05 - 1 to 2 fresh jalapeños, thinly sliced, seeds removed for less heat

06 - 1 tablespoon mayonnaise, optional, for extra crispiness
# How To:
01 - Heat a skillet over medium heat and cook bacon strips until crispy, turning occasionally. Remove and transfer to a paper towel-lined plate to drain excess fat.
02 - Preheat a second skillet or griddle over medium-low heat.
03 - Spread softened butter on one side of each bread slice. Optionally, spread a thin layer of mayonnaise on the opposite side for added crispiness.
04 - Layer a slice of cheese on the unbuttered side of two bread slices. Add crumbled crispy bacon, jalapeño slices, and top with another slice of cheese. Cover each with the remaining bread, buttered side facing out.
05 - Place sandwiches in the preheated skillet. Cook for 3 to 4 minutes per side, pressing gently with a spatula until bread is golden brown and cheese is melted.
06 - Remove sandwiches from skillet, let cool slightly, slice in half and serve immediately.
