# How To:
01 - Preheat oven to 350°F. Combine flour, oats, brown sugar, cinnamon, and salt in a small bowl. Cut in cold butter until mixture is crumbly. Spread evenly on a baking sheet and bake for 8-10 minutes until golden brown. Set aside to cool.
02 - In a medium saucepan over medium heat, combine peaches, brown sugar, cinnamon, and lemon juice. Simmer for 4-5 minutes until juices are released. Stir in cornstarch and cook for an additional 1-2 minutes until thickened. Remove from heat.
03 - Whisk flour, sugar, baking powder, baking soda, and salt in one bowl. In another bowl, whisk buttermilk, egg, melted butter, and vanilla extract. Combine wet ingredients with dry, mixing until just incorporated.
04 - Heat a nonstick skillet over medium heat and grease with cooking spray or butter. Pour 1/4 cup batter per pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook an additional 1-2 minutes until golden and cooked through.
05 - Immediately drape each pancake over a rolling pin or thick utensil handle to form a taco shape. Allow to cool in this shape for 2-3 minutes to set.
06 - Fill each pancake taco with peach filling, generously sprinkle with streusel topping, and add whipped cream or ice cream and fresh mint if desired. Serve immediately.
