# How To:
01 - Preheat oven to 425°F. Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
02 - In a large mixing bowl, toss carrots, parsnips, sweet potatoes, and red onion with 2 tablespoons olive oil, 3/4 teaspoon salt, and 1/2 teaspoon black pepper. Spread evenly on the prepared baking sheet.
03 - Rub chicken breasts with 1 tablespoon olive oil, 1 teaspoon salt, and 1/2 teaspoon black pepper on all sides.
04 - In a small bowl, combine parsley, thyme, rosemary, garlic, lemon zest, and Parmesan cheese. Mix until well combined.
05 - Press the herb mixture firmly onto the tops of each chicken breast, coating generously.
06 - Nestle the herb-crusted chicken breasts among the vegetables on the sheet pan, spacing evenly.
07 - Roast for 30 to 35 minutes, or until chicken reaches an internal temperature of 165°F and vegetables are tender and golden brown.
08 - Remove from oven and let rest for 3 to 5 minutes before serving. Garnish with additional fresh herbs if desired.
